Truffle is one of the most celebrated ingredients in modern cuisine. Any dish is instantly elevated by this mushroom’s presence. However, this is a type of mushroom that is incredibly season — available only for a few months in a year. And now that we are leaving summer behind and entering autumn, truffle season is finally here.
This mushroom is already a mainstay ingredient in restaurants all across London, but now that it is in season, many luxury restaurants are celebrating this ingredient by featuring them front and centre in their new menus and dishes. COYA, the luxury Peruvian restaurant with outlets in Mayfair and City of London, is offering guests a full sensory experience by featuring truffles in many of their signature dishes. Some of them include baos de wagyu with pulled wagyu and truffle emulsion adorned with rocket cress as well as the ceviche de corvina a la trufa with stone bass, truffle, ponzu and chives. You wouldn’t think that the mushroom works with ceviche but having personally tried that dish, we can safely say that it absolutely does, and makes for a delicious burst of flavour. Indulge in the luxurious flavours of truffle season with Coq d’Argent’s truffle tasting menu, designed by head chef Damien Rigollet. Known for his expertise in French cuisine, chef Rigollet has curated a six-course menu that highlights the rich, aromatic essence of truffles, paired with exceptional wines. Championing both black and Alba white truffles, menu highlights include seared stone bass with truffle risotto and matelote sauce, rose veal rump with mashed potatoes, wild mushroom and truffle sauce and a warm dark chocolate and orange soufflé tart, black truffle ice cream. Sale e Pepe in Knightsbridge has unveiled its exclusive tartufo bianco menu, celebrating the seasonal delicacy of white truffles. Guests can experience the limited edition white truffle menu, which features a selection of traditional antipasti such as burrata caprese with plum tomatoes, basil and olive oil; beef carpaccio with rocket, sun-blushed tomatoes, toasted pine kernel and lemon mustard dressing and more — all finished with shavings of the Piedmontese special.
Larger plates include freshly made tagliatelle with white truffle, porcini mushroom risotto with butter,
parmesan and white truffle and a classic wagyu beef tartare topped with white truffle. Also on the menu, pan-
seared king scallops with porcini cream foam and a grilled USDA prime rib eye with herb butter, both

Belvedere, the fine dining Italian restaurant in Holland Park, has launched a white truffle menu, with head chef Lello Favuzzi working closely with small-scale suppliers from villages across Italy to source the best ones. Available as supplements on the à la carte, the dishes will be topped with copious shavings of white truffle, with highlights including fried hen’s eggs; hand-chopped beef battuta; paglia e fieno taglierini, and house-made ice cream infused with white truffle. A scoop of house-made ice cream infused with white truffle provides a sweet conclusion to the meal.
