Award-winning cocktail experts from Hotel Eden, Principe di Savoia and 45 Park Lane share their favourite Negroni recipes
While we love sampling the latest new cocktails, it is true that you really can’t beat a well-made classic, and no classy New Year celebration would be complete without the iconic Negroni taking centre stage. As we count down to 2021, Tempus has rounded up three takes on this iconic tipple from Dorchester Collection’s award-winning Italian bartenders at Hotel Eden in Rome, Principe di Savoia in Milan, and from 45 Park Lane, renowned in London for its Negronis.
Keep it Classic with Hotel Eden Rome’s Negroni

For Negroni lovers, there isn’t much better than sipping the classic cocktail at aperitivo hour in the heart of Rome, while enjoying panoramic views from Hotel Eden’s Il Giardino bar. If you can’t make it to Rome, you can make Hotel Eden’s version of the Negroni in the comfort of your own home, courtesy of head barman Mirko Simonazzi:
Ingredients:
30 ml Campari bitter
30 ml Antica Formula Carpano Vermouth
30 ml Tanqueray Gin
Orange zest to garnish
Glass:
Old Fashioned glass
Method:
Stir in a mixing glass over ice and double strain over fresh ice. >>
Try a Golden Negroni from 45 Park Lane

Known in London for it’s Negroni, the hotel’s BAR 45 has it’s own Negroni Trolley – featuring the hotel’s Barrell Aged Negroni which also awaits hotel guests in their room upon arrival. Head bartender Francesco Orefici says: I’m often asked what the secret is to creating the perfect Negroni. It consists of equal measures of gin, Campari and vermouth poured over ice. Of course the difference is all about which gin and vermouth you prefer in your Negroni. Our dedicated Negroni trolley lets us bring a bit of theatre to your table, and the chance to choose the exact mix and flavour you prefer.”
Francesco has created a number of twists on the classic Negroni for guests to enjoy, including his Golden Negroni. See recipe below:
Ingredients:
30 ml of Botanist Gin
15 ml of Italicus
15 ml of Suze Liqueur
30 ml of Martini Ambrato
One lemon peel to garnish
Glass:
Stemless Burgundy Glass
Method:
Pour the Botanist Gin, Italicus, Suze Liqueur and Martini Ambrato into the mixing glass filled up with ice cubes, and stir for 8-10 seconds with a long bar spoon (mixing spoon). Using a cocktail strainer, poor the chilled liquid into a stemless Burgundy glass over a large ice chunk, or a few cubes of ice depending on what you have. Squeeze the lemon peel over the cocktail, twist and let it drop into the glass. Enjoy your Golden Negroni! >>
Mix a Cent’anni Negroni from Milan’s Principe di Savoia

In celebration of the 100th anniversary of the classic Italian cocktail last year, Milan’s Principe di Savoia created its own unique twist on the recipe, the Cent’anni Negroni. Bar Manager Daniele Confalonieri takes us through the recipe:
Ingredients:
20 ml Del Professore Red Vermouth
20 ml Campari
10 ml Domaine de Canton ginger liqueur
20 ml Fever Tree Ginger beer
1 tea spoon of Amaro Ramazzotti Il Premio
Slice of dried orange to garnish
Glass:
Old Fashioned glass
Method:
Stir in a mixing glass filled with ice, and strain into glass over fresh ice.
