Fans of Pollen Street Social will be happy to hear that Ihra and Jason Atherton have recently opened their new venture Sael in St James’ Market, bringing the Pollen Street Social team back together, including head chef Dale Bainbridge. Offering a fresh take on British cuisine, the brasserie will be an homage to the diverse heritage of the British Isles with ingredients sources exclusively from these areas, with a menu comprised of hyper seasonal dishes, departing from the traditional three course meals with a mixture of small and large plates and a focus on wood fired cooking. The decor reflects the celebration of all things British, with a nod to ‘‘cool Britannia’, and the drinks menu will feature a broad selection of homegrown wines, beers and ciders. Further, upstairs will be home to a separate bar, playfully named Apples & Pears, that will feature its own separate snack menu and is decorated with art work from the Young British Artists movement.
