BRORA 40-YEAR-OLD WHISKY
One of Scotland's earliest purpose-built malt whisky distilleries, Brora was founded in 1819 as Clynelish by the Marquess of Stafford. This is a fine, elegant old coastal malt with rich fruit sweetness and compelling smokiness, held in perfect balance and a vigour remarkable for its age.
Clear amber in colour with fine long beading. On the nose there is a slight prickle, then sweet, smoky-peat and wafts of treacle, toffee and smoke with iodine. This gives way to rich, sweet fruit and ripe figs. On the palate it is exquisitely smooth, with a lightly waxy texture and a powerful, rich, darkly sweet, savoury then finally smoky taste, with great balance, length and persistence.
STAUNING EL CLASICO
Stauning, the award-winning whisky from the west coast of Denmark, is launching El Clásico, a brand-new Nordic rye whisky, this spring. Aged in vermouth casks, El Clásico is an explosive and warm-blooded whisky that will satisfy curious whisky drinkers on the hunt for new flavour experiences. Warm and fruity with roasted caramel notes, alongside sweet flavours from the vermouth casks, this innovative Danish whisky provides the flavours of a Manhattan in one delicious dram.
As Rye whisky and sweet vermouth are the pillars of the iconic Manhattan cocktail, Stauning experimented with maturing whisky in vermouth casks. The result was explosive and El Clásico was born. Aged for three years in American Virgin Oak barrels, followed by one year in Spanish Vermouth barrels, the result is a warm and intense taste of newly-harvested grains with a spicy and sweet aftertaste alongside subtle notes of bitter botanicals.

This fascinating and totally unique spirit is based on Pasilla Mixe, an obscure smoke-dried chili grown that can only be found at around 2,700 meters above sea level in the Sierra Norte mountains outside of Oaxaca City, Mexico.
The ingredients are then sent to Empirical Spirits, a distillery based in the harbour of the Danish capital Copenhagen, where they are added to a final spirit based on pilsner malt, purple wheat and Belgian Saison yeast before being aged in Oloroso Sherry Casks for 21 days.
Added to a margarita – such as the one outlined in a recipe on Empirical's website – Ayuuk transforms the cocktail into a smoky yet refreshing explosion of flavour that is perfect for a summer day.
